Zucchini Borani Recipe
Wash and peel the carrots and zucchinis. Then grate them with a fine grater.
Put a pan on heat and coat it with olive oil. Add the grated carrot and zucchini to the pan and sauté them in oil over medium heat for 10 minutes. Put the lid on and let them be cooked and softened. Then turn off the heat and set them aside.
Meanwhile, wash herbs until it is clean from dust. Then put them in a colander to drain the excess water. Now transfer them to a tray and chop them finely.
Chop the walnuts by rocking the blade of a large knife across the nuts.
Toss the sautéed zucchini and carrots into a large mixing bowl. Add the chopped herbs, walnuts, grated garlic, and yogurt to the bowl and mix the ingredients well until they are combined and uniform.
Transfer the ingredient to your desired dish and spread the ingredients uniformly on the plate with a spatula or spoon. Garnish it with walnut, olive, or canned corn, and serve it with flatbread or baguette. Enjoy your meal!
