Ash Reshteh Recipe
Ash Reshteh is a traditional and old Iranian dish cooked with various recipes. This food combines noodles, beans, vegetables, vinegar, or curd.
Ingredients for four people | |
dried chickpeas | ½ cup |
dried navy beans | ½ cup |
brown lentils | 1 cup |
spinach | 1 kg |
cilantro | 300 g |
dill | 100 g |
chive | 200 g |
fresh mint | 100 g |
yellow onions | 2 |
garlic cloves | 6 |
liquid kashk | 2 cup |
Reshteh ash (Persian soup noodles) | 100-150 g |
dried mint | 1 tbsp |
Salt | 1 tsp |
turmeric | 1 tsp |
Black Pepper | ½ tsp |
Vegetable oil | 6 tbsp |
Ash Reshteh Instructions
Step 1
Put the chickpeas and white navy beans in a water bowl for 12 hours and let them soak. If possible, change the water in the bowl twice during these 12 hours.
Step 2
After 12 hours, wash the chickpeas and navy beans in cold water, pour them into a large pot, and add eight cups of water.
Step 3
Put the pot on medium heat to cook the beans for 1 hour. Separate the cilantro, mint, and dill leaves and discard the middle sticks.
Step 4
Wash cilantro, mint, dill, onion, and spinach, then coarsely chop. After an hour, wash the brown lentils, then add the brown lentils with the vegetables to the pot.
Step 5
Meanwhile, peel the onions and chop them coarsely. Put a pan on medium heat and add the onion with two tablespoons of oil.
Step 6
sauté the onion for 3 to 5 minutes until golden, then add the turmeric and sauté for another minute. Take the sautéed onion out of the pan and set it aside.
Step 7
Finely chop the garlic, then add the garlic and two tablespoons of oil to the pan and sauté for one minute. Take the sautéed garlic out of the pan and put it aside.
Step 8
Pour the remaining oil into the pan, add the dried mint and sauté for 20 seconds. Now put half of the sautéed onion and sautéed garlic in the pot.
Step 9
Put half the sautéed onion, garlic, and black pepper in the pot. After 45 minutes, add the noodles. After 15 minutes, taste the Ash and add salt if necessary.
Step 10
Finally, add the curd liquid and mix the Ash gently. After 5 minutes, pour the Ash into the desired dish and garnish with mint, garlic, and fried onion.
