Thai Lemongrass Soup with Shrimp

Today on the Takrecipe website, we’re diving into a fragrant, zesty, and warming dish known as Thai Lemongrass Soup with Shrimp, also called “Tom Yum Goong.” This popular Thai delicacy is renowned for its balance of spicy, sour, and savory flavors — all elevated by the citrusy punch of lemongrass. Perfect for a cozy meal, this soup brings together fresh herbs, succulent shrimp, and traditional Thai seasonings to create a soul-soothing bowl that will make your taste buds dance. Let’s prepare this comforting and aromatic dish for four people!

Ingredients (Serves 4)

  • 12 large shrimp, peeled and deveined
  • 4 cups chicken or seafood stock
  • 2 stalks fresh lemongrass, cut into 2-inch pieces and smashed
  • 3 kaffir lime leaves, torn into pieces
  • 3 slices galangal (or fresh ginger as a substitute)
  • 2 Thai red chilies, smashed (adjust to taste)
  • 1 cup mushrooms, sliced (straw or button mushrooms work well)
  • 2 tablespoons fish sauce
  • 1 tablespoon lime juice (or more to taste)
  • 1 teaspoon sugar
  • Fresh cilantro leaves for garnish
  • Optional: 1 small tomato, cut into wedges

Instructions

Step 1: Prepare the Broth

In a medium pot, bring the chicken or seafood stock to a gentle boil over medium heat. Once it starts bubbling, add the smashed lemongrass, torn kaffir lime leaves, and sliced galangal. Let these aromatics simmer for about 10 minutes. This will allow the broth to absorb the fresh, citrusy, and peppery notes that are essential to the soup’s flavor base.

Step 2: Add Vegetables and Seasonings

After the broth is infused, add the mushrooms and optional tomato wedges. Then, toss in the smashed red chilies for heat. Simmer the soup for another 5–6 minutes until the mushrooms are tender. Stir in the fish sauce, sugar, and fresh lime juice. Taste and adjust the seasoning — it should have a pleasant balance of salty, sour, and slightly sweet flavors.

Step 3: Cook the Shrimp

Now add the cleaned shrimp to the pot. Let them cook for 2–3 minutes, or until they turn pink and opaque. Be careful not to overcook the shrimp, as they can become rubbery. Once done, remove the pot from heat immediately.

Step 4: Serve and Garnish

Ladle the hot soup into serving bowls, making sure each portion gets a good mix of shrimp, mushrooms, and broth. Top with fresh cilantro leaves for a burst of color and herby aroma. Serve immediately while the soup is piping hot and fragrant.

Thai Lemongrass Soup with Shrimp

Tip 1: Use Fresh Herbs

🟢 Fresh lemongrass, lime leaves, and galangal provide the most authentic and robust flavor — avoid dried alternatives if possible.

Tip 2: Balance the Flavors

🟢 Thai cuisine is all about harmony — adjust lime juice, fish sauce, and sugar carefully to get the perfect taste balance.

Tip 3: Don’t Overcook the Shrimp

🟢 Shrimp cook very quickly; once they turn pink, remove them from heat to keep them juicy and tender.
