Ingredients (Serves 4)
- 1½ cups cooked chickpeas (or 1 can, drained and rinsed)
- 2 medium carrots, peeled and grated
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- ½ cup breadcrumbs
- 1 egg
- 1 teaspoon ground cumin
- ½ teaspoon paprika
- Salt and black pepper to taste
- 2 tablespoons fresh parsley or cilantro, chopped
- 2 tablespoons olive oil (for frying)
Instructions
Step 1: Prepare the chickpeas
Start by placing the cooked or canned chickpeas in a large mixing bowl. Use a fork or potato masher to mash them until they form a coarse, thick mixture. You want most of the chickpeas mashed but still with some texture remaining for a hearty bite.
Step 2: Add vegetables and seasonings
Add the grated carrots, chopped onion, minced garlic, parsley or cilantro, ground cumin, paprika, salt, and black pepper to the mashed chickpeas. Mix everything thoroughly so the spices are evenly distributed throughout the mixture.
Step 3: Bind the mixture
Crack an egg into the bowl and add the breadcrumbs. Mix well until the mixture holds together easily when pressed. If it feels too wet, add a bit more breadcrumbs. If it’s too dry, you can add a splash of water or a little more egg.
Step 4: Form the patties
With clean hands, shape the mixture into 8 equal-sized patties. Flatten them slightly with your palm so they cook evenly. Place them on a tray or plate lined with parchment paper while you finish forming the rest.
Step 5: Cook the patties
Heat the olive oil in a non-stick skillet over medium heat. Once hot, gently place the patties in the pan, being careful not to overcrowd. Cook for about 3–4 minutes on each side, or until golden brown and crisp. Transfer the cooked patties to a plate lined with paper towels to absorb any excess oil.
Step 6: Serve
Serve the patties warm with your favorite dipping sauce, a fresh salad, or in pita bread for a delicious wrap. Enjoy immediately, or refrigerate leftovers for up to 3 days.
