Ingredients (Serves 4)
- 4 medium beets, trimmed and scrubbed
- 1/2 cup walnuts
- 100 grams (about 3.5 oz) goat cheese, crumbled
- 4 cups mixed greens (such as arugula, spinach, or baby lettuce)
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- 1 teaspoon Dijon mustard
- Salt and black pepper to taste
Instructions
1. Roast the beets
Preheat your oven to 400°F (200°C). Wrap each beet individually in aluminum foil and place them on a baking sheet. Roast for about 45 to 60 minutes, or until they can be easily pierced with a knife. Once roasted, allow the beets to cool slightly, then peel off the skins using a paper towel or your hands. Slice the beets into wedges or rounds, depending on your presentation preference.
2. Toast the walnuts
While the beets are roasting, place the walnuts in a dry skillet over medium heat. Stir frequently for about 5-7 minutes, or until they are lightly golden and fragrant. Remove them from the heat and let them cool. You can roughly chop them or leave them whole for more texture.
3. Prepare the vinaigrette
In a small bowl, whisk together the olive oil, balsamic vinegar, Dijon mustard, salt, and black pepper until the mixture is well combined and emulsified. Taste and adjust seasoning if necessary.
4. Assemble the salad
In a large serving bowl or platter, spread the mixed greens as the base. Arrange the roasted beet slices on top, followed by the toasted walnuts and crumbled goat cheese. Drizzle the vinaigrette over the entire salad just before serving, or serve it on the side to allow guests to dress their portions individually.
Tip 1: Use gloves when peeling beets
🟢 Beets can stain your hands easily, so wearing gloves during peeling helps keep your fingers clean.
Tip 2: Chill the salad before serving
🟢 Letting the salad sit in the fridge for 10–15 minutes before serving makes it even more refreshing, especially on warm days.
Tip 3: Add a citrus twist
🟢 A few orange segments or a splash of orange juice in the vinaigrette adds a lovely brightness that pairs beautifully with beets and goat cheese.
