Ingredients (Serves 4)
- 2 cups butternut squash, peeled and cubed
- 8 oz elbow macaroni
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup milk (whole or 2%)
- 1 tablespoon unsalted butter
- 1/2 cup grated sharp cheddar cheese
- 1/2 cup grated mozzarella cheese
- 1/4 teaspoon ground nutmeg (optional, for warmth)
- 2 tablespoons grated Parmesan (for topping)
Instructions
1. Roast the Butternut Squash
Preheat your oven to 400°F (200°C). Place the cubed butternut squash on a baking sheet and drizzle with olive oil. Sprinkle with salt and pepper, then toss to coat. Roast for about 25 minutes, or until the squash is tender and lightly golden. Remove from the oven and let it cool slightly.
2. Cook the Pasta
While the squash is roasting, bring a large pot of salted water to a boil. Add the elbow macaroni and cook according to the package instructions until al dente. Drain the pasta and set aside.
3. Blend the Sauce
In a blender or food processor, combine the roasted butternut squash and milk. Blend until smooth and creamy. If the mixture is too thick, you can add a little more milk to reach your desired consistency.
4. Make the Cheese Sauce
In a large saucepan, melt the butter over medium heat. Pour in the squash puree and stir well. Add the cheddar, mozzarella, and nutmeg (if using). Stir continuously until the cheese melts completely and the sauce becomes smooth and silky.
5. Combine and Serve
Add the cooked macaroni to the sauce and stir until every piece is well coated. Spoon the mac and cheese into a serving dish and sprinkle Parmesan over the top. If you like a crispy topping, you can broil it for 2–3 minutes until golden and bubbling. Serve hot and enjoy!
Tip 1: Roast for Rich Flavor
🟢 Roasting the squash instead of boiling it enhances its natural sweetness and adds depth to the dish.
Tip 2: Choose the Right Cheese
🟢 Sharp cheddar gives a bold flavor, while mozzarella adds that gooey texture — don’t skip either!
Tip 3: Blend Smoothly
🟢 Make sure to blend the squash thoroughly with the milk to avoid any lumps in your sauce.
