Ingredients (Serves 4)
- 1 pound (450g) shelf-stable or refrigerated potato gnocchi
- 1 pound (450g) Brussels sprouts, trimmed and halved
- 3 tablespoons olive oil
- 3 garlic cloves, minced
- 1 teaspoon salt
- ½ teaspoon freshly ground black pepper
- ½ teaspoon red pepper flakes (optional)
- ½ cup grated Parmesan cheese
- Juice of ½ a lemon
Instructions
Step 1: Prepare the ingredients
Start by trimming the ends off the Brussels sprouts and cutting them in half. If some are particularly large, quarter them to ensure even cooking. Mince the garlic and set it aside. Open the package of gnocchi — there’s no need to boil them beforehand for this recipe.
Step 2: Sauté the Brussels sprouts
In a large non-stick or cast-iron skillet, heat 2 tablespoons of olive oil over medium heat. Once hot, add the Brussels sprouts cut-side down. Let them cook undisturbed for 5–6 minutes until the bottoms are deeply golden and starting to caramelize. Stir occasionally afterward and cook for another 3–4 minutes until just tender. Transfer them to a plate and set aside.
Step 3: Crisp the gnocchi
In the same skillet, add the remaining 1 tablespoon of olive oil. Add the gnocchi in a single layer and let them cook without stirring for 3–4 minutes until the bottoms are golden and crispy. Stir and continue cooking for another 5 minutes, tossing occasionally until they are golden on all sides.
Step 4: Combine and season
Add the garlic to the pan and sauté for 1 minute until fragrant. Return the Brussels sprouts to the skillet. Sprinkle in the salt, black pepper, and red pepper flakes if using. Stir well to combine and heat everything through for 2 more minutes.
Step 5: Finish and serve
Remove the skillet from heat and sprinkle the Parmesan cheese over the top. Squeeze fresh lemon juice to brighten the dish and give it a quick toss. Serve warm directly from the skillet for a rustic and delicious meal.
Tip 1: Choose fresh, firm Brussels sprouts
🟢 Fresh Brussels sprouts with tight, green leaves roast better and deliver a sweeter, nuttier flavor.
Tip 2: Don’t overcrowd the skillet
🟢 Giving space to the ingredients ensures they crisp up nicely instead of steaming.
Tip 3: Add a protein for a fuller meal
🟢 Toss in some cooked bacon, sausage, or a poached egg to turn this into a heartier dish.
