Instructions

Step 1: Prepare the vegetables

Begin by washing the cabbage thoroughly and removing any tough outer leaves. Cut the cabbage into quarters, remove the core, and then thinly slice the leaves. Set aside. Also slice the onion and green chilies so they are ready to use during the cooking process.

Step 2: Heat the oil and temper the spices

In a large skillet or wok, heat the oil over medium heat. Once hot, add the mustard seeds and wait for them to start popping. Then add the cumin seeds and let them sizzle for a few seconds, releasing their aroma into the oil. This step is key to building the dish’s flavor base.

Step 3: Sauté onions and chilies
