Instructions
Step 1: Prepare the Falafel Mixture
In a food processor, combine the soaked and drained chickpeas, chopped onion, garlic cloves, parsley, cilantro, cumin, coriander, cayenne pepper, salt, and black pepper. Pulse until the mixture is finely ground but not a paste—you should still see tiny bits of chickpeas and herbs. Transfer the mixture to a bowl and let it rest in the fridge for 30 minutes to firm up slightly.
Step 2: Shape and Bake
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper and lightly brush it with olive oil. Using your hands, form the chilled falafel mixture into small patties or balls, about the size of a tablespoon each. Place them on the baking sheet and brush or spray the tops with a little more olive oil. Bake for 15–20 minutes, flipping halfway through, until the falafel is golden and crispy on the outside.
