  • 350g (12 oz) tagliatelle pasta

  • 3 cloves garlic, minced
  • 1 small onion, finely chopped
  • 200ml (3/4 cup) heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and freshly ground black pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

Step 1: Prepare the pasta

Bring a large pot of salted water to a boil. Add the tagliatelle and cook according to the package instructions until al dente. Reserve 1/2 cup of the pasta cooking water, then drain the pasta and set aside.

Step 2: Sauté the mushrooms

While the pasta cooks, heat the olive oil and butter in a large skillet over medium heat. Add the chopped onion and cook for 2–3 minutes until softened. Add the garlic and stir for another 30 seconds until fragrant. Then, add the sliced mushrooms and cook for 6–8 minutes, stirring occasionally, until the mushrooms are golden and their moisture has evaporated.

Step 3: Create the creamy sauce

Reduce the heat to low. Pour the heavy cream into the skillet with the mushrooms, stirring to combine. Let the mixture simmer gently for 2–3 minutes until slightly thickened. Stir in the grated Parmesan cheese and season with salt and pepper to taste. If the sauce is too thick, add a bit of the reserved pasta water to loosen it.

Step 4: Combine and serve

Add the cooked tagliatelle to the skillet and toss gently to coat the pasta with the creamy mushroom sauce. Warm through for a minute, then divide the pasta among four plates. Garnish with fresh parsley and a little extra Parmesan, if desired. Serve hot and enjoy!
