Today you will learn how to make Leek soup. You usually prepare various soups at home during winter, but we try to make them healthier and more unique. You need some chopping and simmering, and it would be a perfect choice for the time you’re feeling a bit under the weather.

Ingredients for four people
Leeks2 cup

medium onion1
Butter20 g
Milk1 cup
Chicken stock4 cup
cream (optional)2 tbsp
Thyme½ tsp
Salt1
Ground black pepper½ tsp

Leek Soup Recipe

Step 1

Slice off the root end of the leek and tough green top. Then wash the leeks and drain the excess water. Now transfer them to a tray and chop them.

Step 2

Peel and chop the onion, put a pot on heat, and add the butter. Once the butter melts, sauté the onions in oil over medium heat until they get translucent.

Step 3

Add the chopped leeks to the pot and sauté a little until they get darker.

Step 4

Scrub potatoes well, remove any eyes, and peel them. Then chop them into small cubic chunks. Add them to the pot along with thyme, salt, and black pepper, and sauté for a while.

Step 5

Add chicken stock to the pot and bring it to a boil. Then reduce the heat to low and let it simmer.

Step 6

Blend the vegetables when they are cooked with a hand blender. You can also add them to a food processor.

Step 7

Then pour the milk into the soup and let it cook and thicken up.

Step 8

When the soup reaches the desired thickness, add a ladleful of the soup to the cream and mix until the cream reaches the temperature of the soup. Then, add the cream to the pot and mix.

Step 9

Finally, remove the pot from the heat and pour the soup into the desired dish. You can garnish the leek soup with cream or chopped parsley and serve it with fresh bread. Enjoy your meal.
