Greek cucumber salad
Today we will make Greek cucumber salad, a vegan and refreshing salad from Greece for hot summer days when you want a chilled salad that is also hearty enough to fill you up. This recipe is simple to throw together, and you can easily make it ahead of time.
Ingredients for four people
- Small red onion 1
- Feta cheese 200 g
- Black olive 8
- Cucumber 2
- Colored bell pepper 1
- Tomato 4
- Olive oil 2 tbsp
- Balsamic vinegar ¼ cup
- Salt 1 tsp
- Fresh lemon juice 1 tbsp
Dice Onion and Cucumbers
Wash and dice the onion and cucumbers into thin slices and toss them in a large mixing bowl.
Add Tomatoes and Toss
Now cut the tomatoes into large chunks and add them to the bowl.
Chop Bell Peppers
Wash and carefully remove seeds and membranes from the bell peppers. Then coarsely chop them and add them to the bowl. To make the salad more elegant, use red or orange bell peppers.
Add Olives and Oil
Deseed the olives and cut them into halves. Add them along with the olive oil to the bowl.
