Stuffed Potatoes Recipe
Today we will make stuffed potatoes, one of the delicious and international dishes you can use as an appetizer. It is super yummy, and all the flavors go well together. Serve it as a snack or perfect for lunchtime when you have a busy afternoon ahead.

Stuffed Potatoes Recipe
Step 1
Scrub potatoes well, place them unpeeled in a pot filled with water, and bring the water to a boil. Then reduce the heat and simmer the potatoes for 20 to 30 minutes. Potatoes are ready when they are fork tender. You can also bake them at 180 Celsius or 350 Fahrenheit for an hour.
Step 2
Grab the potato with a towel and cut off the top, about one-third of the potato. Take that top off and scoop out as much potato as possible from the top and body of the potatoes. Mash them using a fork or masher.
Step 3
For preparing the filling, peel and coarsely chop the onion, put a pan on the heat and add two tablespoons of oil. Then sauté the onions in oil over medium heat until they get translucent.
Step 4
Add the minced meat to the pan, then sauté for 15 minutes until the color of the meat changes.
Step 5
Add salt, turmeric, black pepper, and meat seasoning to the meat, and sauté them until the aroma of the spices is released. You can use a combination of paprika, chili powder, garlic powder, ground cumin, and dried oregano if the meat seasoning is unavailable.
Step 6
Wash and carefully remove seeds and membranes from the bell peppers and coarsely chop them. Slice the mushrooms, add them with the chopped bell peppers to the pan, and sauté until their liquid evaporates and becomes well cooked.
Step 7
Preheat the oven to 180 Celsius or 350 Fahrenheit degree.

Wash and finely chop the chives. Add it to the pan and let its aroma release.
Step 9
Add the mashed potato that is removed from the potatoes to the pan and mix. You can flavor the ingredients with tomato paste if you like.
Step 10
Divide your mixture evenly among the potatoes, stuff each with the filling mixture, and top it with mozzarella cheese. You can garnish it with some chopped parsley.
Step 11
Bake the stuffed potatoes in the preheated oven for about 10 minutes. After that, you can grill them until the cheese is golden and bubbly. Put them in the dish you want and serve with your favorite sauce and a cold beverage. Pick up a piece and enjoy!
