Spinach Pide Recipe
Mix flour with yeast and a tablespoon of salt to prepare the dough in a large mixing bowl. In this recipe, instant yeast is used, which is readily available and does not need to proof, and can be mixed directly with the ingredients.
Now gradually add water and liquid oil and mix well until the dough is formed. Water should not be cold nor hot, but slightly warm. Depending on the flour, the amount of water is approximate, so try to add it gradually and knead it with your hand until the dough looks shaggy and tacky.
Tip the dough onto a work surface and knead the dough with your hand for 5 to 10 minutes. Knead until you get a soft and elastic dough.
Place the dough into the large bowl and cover it with plastic film. Set the dough in a warm environment for 45 minutes to an hour until it has doubled in volume.
Wash spinach several times until it is clean from dust. Then drain them in a colander to remove the excess water. Transfer the spinach to your work surface and chop it.
Put the spinach in an unoiled pot and sauté and stir them until they wilt down and reduce in volume. Then set it aside to chill.
Crack the eggs in a large mixing bowl, add feta cheese, salt, and black pepper, and mix them well. Then add sautéed spinach and stir them to get mixed.
After an hour of resting, punch down the dough to release its air bubbles. Turn out the dough onto your work surface, and divide it into four to six even pieces after giving it a little kneading.
Meanwhile, preheat the oven to 200 Celsius or 375 Fahrenheit degree.
Roll out each piece of dough into a circle or an oval shape with a diameter of about 20 centimeters. Then pile some of the spinach and egg mixtures on each dough.
Then roll the two opposite sides of the dough towards the center to form a boat-shaped dough. Next, pinch the corners of the dough together. If you want, you can sprinkle some grated mozzarella on the Pide bread, which is completely optional.
Now place the Pide bread on your tray and bake them for about 20 minutes until golden on top. Then take them out of the oven, brush them with a bit of olive oil, and serve them hot. Enjoy your meal!
