Turkish Spinach Borek Recipe | Easy and Delicious
Today you will learn how to make rolled Borek with spinach fillings. Borek is a filled sandwich made of thin flaky dough like Yufka. It is usually made with meat, cheese, or vegetables; today, we are making it with spinach. You will be amazed at how delicious it will be with spinach and mushroom filling.

Spinach Borek recipe
Wash spinach a couple of times until it is clean from dust. Then put them in a colander to drain the excess water. Now transfer them to a tray and chop them coarsely.
Put a pan on heat and sauté the spinach until it shrinks and the water evaporates.
Peel and finely chop the onion, put another pan on the heat and add two tablespoons of oil. Then sauté the onions in oil over medium heat until they get translucent.
Add the salt, black pepper, turmeric, and chopped garlic and stir well on medium heat for a minute until the aroma of the ingredient is released.
Slice the mushrooms, add them to the pan containing onion, and sauté until their liquid evaporates and becomes well cooked.
Take the spinach out of the pan and add them to the mushroom mixture. Sauté for 2 to 5 more minutes.
Add the white cheese to the spinach mixture. Let the white cheese melt and mix it with the ingredients.
Preheat the oven to 180 degrees Celsius.
Place the dough on your tray. Pile a layer of the ingredients on the sheets and a sprinkle of mozzarella and roll it. It does not have to be very tight. Rub some milk on the end of the dough so that it sticks together and the ingredients do not fall out. Now place the Boreks next to each other in your baking tray. You can place the Yufka sheets on your baking tray and put the ingredients and dough layer by layer like lasagna.
Add the egg yolk to a suitable bowl, then whisk with a fork until it is corporate. Brush it on the Boreks. Then garnish it with a sprinkle of sesame.
Place the Boreks into the oven and bake them for 20 to 30 minutes until it is nice and golden brown. You can sauté them if there is no oven. Heat oil in low heat. When oil starts to heat, add your Boreks. Sauté for 10 to 12 minutes to become crispy on both sides. When it becomes crunchy, your Borek is ready. Serve Borek with yogurt or ketchup and enjoy it with your family and friends.
