Kashke Bademjan is an easy vegetarian dip made from some basic ingredients, including Kashk and eggplant, and is prepared with different recipes. This is a perfect appetizer for your parties or dinners and will soon become your family favorite.

Ingredients for four people 
Large eggplant4
Medium onion2
Kashk (yogurt whey)4 tbsp
Walnut2 tbsp
Garlic4
Dried mint2 tbsp
Salt1 tsp
Black pepper½ tsp

Kashke Bademjan Recipe

Step 1

Peel the eggplants cut them into slices, and place them in a tray. Next, sprinkle some salt on the eggplants and let them rest for 20 minutes. In addition to removing the bitterness of the eggplants, this makes them absorb less oil when frying.

Step 2

Then rinse and strain the eggplants in a colander and squeeze them to remove the excess water in the eggplants.

Step 3

At this stage, put a pan on the heat and add two to three tablespoons of oil. After the oil is hot, add the eggplants to the pan and fry on both sides well. Then remove them from the pan and set them aside.

Step 4

Chop the onions into small pieces. Add a little oil to the pan and sauté them well until the onions turn golden. Then finely chop the garlic and sauté it with fried onions for about a minute.

Step 5

Next, puree the eggplants with a food processor or a handheld blender and add them to the pan. Add salt, black pepper, and turmeric to them and sauté the pureed eggplants well until the excess water in the pan evaporates.

Step 6

Add the chopped walnuts and Kashk to the pan and stir well until they get uniform. If the Kashk you use is too thick, you can add half a cup of hot water to them.

Step 7

At this stage, put the lid on the pan and let the excess water in the pan evaporates. Meanwhile, fry the dried mint with a bit of oil for a minute, then add it to the pan and mix them well.

Step 8

When you notice some oil accumulating on the dip’s surface and the water evaporates completely, your eggplant dip is ready. Put the food in the desired dish and garnish it according to our taste with ingredients such as fried mint, fried onion, fried garlic, and Kashk and serve it with warm bread.
