Potato Soup Recipe

Step 1

Put the potatoes in a pot filled with two cups of water and put them on medium heat until they boil and become fork tender. Then take them out of the pot, peel them gently and add them to a suitable pot.

Step 2

Pour the meat broth into the pot and puree the potatoes with a handheld blender. You can also process them with a food processor.

Step 3

Grate the onion with a fine grater and add it to the minced meat with salt, black pepper, and turmeric and mix them well with your hand to get incorporated.

Step 4

Take a small amount of meat mixture and roll it between the palms of your hands to shape it into little balls.

Step 5

Put a pan on medium heat and add butter. Once the butter melts, place the meatballs in the pan and sauté them on all sides. Set the meatballs aside.

Step 6

Crack the eggs in a bowl and beat them until thoroughly combined. Next, add lemon juice to the eggs and mix until they are uniform.

Step 7

Now put the meat broth and mashed potatoes on low and gradually add the egg mixture to the pot. Then add the meatballs to the pot and let the soup cook for 15 to 20 minutes. Then turn off the heat, yet allow the pot to sit covered for another 15 minutes.

Step 8

After 15 minutes, pour the soup and meatballs into the soup bowl. If you want, you can serve some butter with the soup. Serve the soup with toasted bread and enjoy. Bon Appetit!
