Adasi Recipe | Persian Lentil Soup with Lemon
Adasi Recipe
Adasi is one of the simple and delicious Iranian dishes. In Iranian, lentils are called Adas, and that is why the name of this dish is Adasi.
Ingredients for four people | |
Brown lentils | 2 cups |
Large potatoes | 1 |
Large onion | 1 |
Garlic cloves | 2 |
White flour | 1 tbsp |
olive oil | 3 tbsp |
tomato paste | 1 tbsp |
salt | 1 tsp |
turmeric | 1 tsp |
black pepper | 1 tsp |
lemon juice | 2 tbsp |
Adasi Instructions
Step 1
Peel onion and finely chop it, then place a saucepan over medium heat and add two tablespoons of olive oil.
Step 2
Add chopped onion and sauté for 3 minutes, then add turmeric, black pepper, tomato paste and sauté for another 5 minutes.
Step 3
Add the lentils and sauté for another 1 minute, then five glasses of water and increase the heat until the water boils.
Step 4
After the water boils, turn down the heat and let the lentils cook for an hour. Peel potato and Cut into one-centimeter cubes.
Step 5
Wash the chopped potatoes in cold water, then put them in a strainer. Put a small pan on low heat and add the rest of the olive oil.
Step 6
Add the flour to the pan and sauté for a few minutes until it changes color slightly, then add the sautéed flour to the pot.
Step 7
After 45 minutes of cooking the lentils, add the potatoes and salt, then let the Adasi cook for another 30 minutes.
Step 8
After this time, pour the Adasi into the desired dish and serve with lemon juice and bread.
