Today we will make carrot salad, a refreshing salad for hot summer days when you want a chilled salad that is also hearty enough to fill you up. This recipe is simple to throw together, and you can easily make it ahead of time.

Raisin | 1 cup |
Walnut | ½ cup |
Greek yogurt | ½ cup |
Mayonnaise | 2 tbsp |
Mustard | 1 tbsp |
Lemon juice | 2 tbsp |
Salt | 1 tsp |
Ground black pepper | 1 tsp |
Carrot Salad Recipe
Step 1
Wash the carrots. Peel them and grate them finely. Add them to a large bowl.
Step 2
Wash raisins and put them in a colander to drain the excess water.
Step 3
add chopped walnuts and drained raisins to the carrots and stir the ingredients until they are combined and uniform.

For preparing the sauce, pour the yogurt and mayonnaise into a suitable bowl and stir them together until they get a smooth texture.

Add lemon juice, mustard, salt, and black pepper to the sauce, then mix well until the ingredients are combined and uniform.
Step 6
Now add the sauce to the carrot mixture and toss until well combined. Then refrigerate the salad for two hours. Chilling the mixture will marinate the salad better and combine all the flavors. This is a great side dish for any barbeque or to take to a potluck. It holds very well in the fridge, and you can store it in the refrigerator for up to 4 days, making it a great meal prep salad.
