One Pot Tomato Rice
Demi Gojeh Farangi (One Pot Tomato), also known as Dampokhtak-e Gojeh, is one of the most effortless and delicious Iranian dishes. Like most Persian recipes, rice is a staple for preparing this dish. This delicious dish is considered one of the most simple and quick dishes, which makes it suitable for when you are in a rush and do not have enough time to prepare food. This dish is made by sautéing and simmering three or four ingredients and is entirely vegetarian. Today at Takrecipe, we have this delicious and healthy one-pot tomato rice for you.

One Pot Tomato Rice Recipe
Step 1
Wash and rinse the rice a couple of times to clean it from any dust or extra starch. Fill a bowl with water, add a generous pinch of salt, and put the rice in it. Let it soak for 30 minutes.
Step 2
Meanwhile, we need to prepare the filling. Chop the onions finely. You can also thinly slice them. Then put a pan covered with oil on heat, and once the oil is hot, add the onions and sauté them until they get translucent.
Step 3
Add turmeric and black pepper to the pan and sauté them for another minute to release their aroma and color.
Step 4
Now add the tomato paste to the pan and sauté them for a couple of minutes to take the rawness of the paste and give it a dark red color.
Step 5
Wash and peel the tomatoes and the potato and chop them into small bite-size chunks. You can also purée the tomatoes. Now add the butter and a teaspoon of salt to the pan.
Step 6
Once the butter melts, add the chopped tomatoes and potato to the pan and sauté them on low heat. Let the ingredients release their juice and absorb it back again.
Step 7
Meanwhile, add the rice to a pot and pour enough water to cover two to three centimeters above the surface. Then put the pot on medium-high heat and let the water in the pot evaporates.
Step 8
Then, when there was a little amount of water left in the pot, add the sautéed tomato mixture to the pot and stir them well to get mixed with the rice. You can also add two tablespoons of brewed saffron here. Let the rice cook for about 5 minutes until the water evaporates completely.
Step 9
Now turn the heat to low, place a heat diffuser under the pot, and let it steam for about 45 minutes or until the rice is cooked thoroughly. Your Dami Gojeh Farangi is ready now. Transfer it to a serving platter and serve it with Torshi or Shirazi Salad. Enjoy your meal.
Notes
with meat
You can also prepare this dish with meat fillings. For this purpose, add about 200 to 300 grams of minced meat to the sautéed onion and sauté them well until the meat changes color. Then add the tomato paste and the rest of the ingredients and continue as above.
