Grilled Quail Recipe

Step 1

Put the quails in a suitable bowl, add liquid oil and four tablespoons of brewed saffron and massage the quails with the oil with your hands for a few minutes.

Step 2

Cut the onions into thin slices and add them to the bowl. Mix the lemon juice, salt, and black pepper and add them to the quails. Add the onions to the bowl, mix the ingredients well with your hands until they are combined, and the quails get coated in the batter. You can add half a cup of cream to the sauce.

Cover the bowl with a plastic film and let it sit in the refrigerator for at least 6 hours. Chilling will marinate the quails and infuse them with flavor.

We recommend you grill these quail on the charcoal grill. Fire up the coals of your grill and let them be covered with gray ash. Next, skewer the quail or place them on the grill rack. Put the quails parallel to each other directly on the heat of the coals. You can also grill them on a pan, but an outdoor grill will make it super.

Meanwhile, add the butter to a small pan, put it on low heat, and let it melt. Then mix the melted butter with the brewed saffron.

Note

If you are sensitive to the smell of chicken and meat, you can add them to a pot filled with water and simmer them with onion and a few bay leaves, rosemary sprigs, or cinnamon sticks for 10 minutes until half-cooked to remove the smell. Then take their skin off before marinating them.
