Kookoo Bademjan Recipe farsi

Kookoo Bademjan is one of the simple and delicious Iranian dishes. This dish combines eggplant, eggs, onions, and potatoes.

Ingredients for four people
Medium eggplant5
Medium onion1
Large potatoes1
All-purpose flour1 tbsp
Salt2 tsp
Garlic cloves4
Black Pepper1 tsp
Turmeric1 tsp
Vegetable oil5 tbsp

Kookoo Bademjan Instructions

Step 1

Peel eggplant and grate it, then pour it into a bowl. Pour one tablespoon of salt over the grated eggplant and let the eggplant juice come out.

Step 2

After 30 minutes, squeeze the grated eggplant by hand to drain it, then discard the eggplant juice. Put the grated eggplant back in the bowl.

Step 3

Peel and Grate garlic cloves, onions, and potatoes, then press by hand to remove excess water.

Add the garlic cloves, onion, potato, All-purpose flour, black pepper, turmeric, egg, and the rest of the salt to the bowl and mix the ingredients well by hand until smooth.

Step 5

Place a pan over medium heat and add the vegetable oil, then wait for the oil to heat well.

Step 6

Take a walnut-sized piece of material and shape it into a round shape, then press a little with the palm of your hand to reduce its diameter.

Step 7

Wait for one side of the Kookoo to fry for 5 minutes, then turn it over so that the other side of the Kookoo fry for another 5 minutes.

Step 8

Fry all the Kookoo material in the same way, then pour it into the desired dish and serve with bread.
