Kookoo Adas Recipe
Kookoo Adas (or Lentil cutlet) is one of the simple and healthy Iranian dishes. You can serve this dish hot, cold, or in a sandwich. This dish combines lentils, eggs, spices, onions, garlic, and parsley.
Ingredients for four people | |
brown lentils | 2 cups |
Large onion | 1 |
Garlic cloves | 3 |
egg | 1 |
Fresh parsley | 50 g |
Toasted flour | 1 cup |
olive oil | 4 tbsp |
Salt | 2 tsp |
Black Pepper | 1 tsp |
Turmeric | 1 tsp |
Vegetable oil | 4 tbsp |
Kookoo Adas Instructions
Step 1
Pour the lentils with one tablespoon of salt and two glasses of water into a pot and put on medium heat to cook for an hour.
Step 2
Peel an onion and chop it finely. Grate the garlic cloves, then finely chop the parsley.
Step 3
Put a pan on medium heat and add the olive oil, then add the onion and Saute for 5 minutes until golden.
Step 4
After an hour, pour the lentils into the strainer to remove excess water. Once the lentils have cooled, pour them into a bowl.
Step 5
Add the Sauteed onion, garlic, parsley, salt, black pepper, turmeric, egg, and breadcrumbs to the bowl.
Step 6
Combine ingredients until smooth, then place a pan over medium heat and add vegetable oil.
Step 7
After the oil heats up, take from the ingredients with a spoon and pour into the pan, then smooth around it with the back of a spoon and let it fry.
Step 8
After 5 to 7 minutes, turn the Kookoo and fry the other side for 5 to 7 minutes. Fry all the Kookoos in the same way.
Step 9
After frying the Kookoos, place them on tissue paper to remove excess oil, then serve with bread.
