Carrot and Coriander Soup Recipe | Easy and Delicious

|Pearl barley||150 g|
|All-purpose flour||1 tbsp|
|Chicken stock||2 cup|
|Salt||1 tsp (or to taste)|
|Ground black pepper||½ tsp (or to taste)|
Coriander Soup Recipe
Soak the pearl barley in ample water for six hours to make them tender and chewy. Then rinse it in a strainer.
Chop the onion into small pieces and sauté it with a bit of oil in a suitable pot until it becomes translucent.
Next, add soaked barley to the pot with 4 cups of water, bring it to a simmer, and let it cook for an hour.
After an hour, grate the carrot with a coarse grater and add it to the pot along with the chicken stock. Let it boil. Then grate the garlic cloves and add them to the pot.
Mix yogurt and flour until they are completely uniform. Pour one or two ladlesful of the soup into the yogurt mixture, mix until they are uniform, and then add them to the pot. If you add yogurt to the soup pot all at once, it may curdle and spoil the appearance of the soup.
Now lower the heat under the pot and let the soup reach a boil. Then add chopped coriander to the soup along with some salt and ground black pepper, and let the soup reach your desired consistency.
